30min · 2 servings Ingredients • 1 Head of a cauliflower • 2 Tbsp Cajun Spice Blend 2 Tbsp Olive oil (I used lemon infused) For the chimichurri: • Bunch of corinader • 1 Red Chilli • A big glug of Olive oil • Sea salt • 1 Tsp apple cider vinegar • 1 Garlic clove 1 Spring onion(not essential but I like using them) Method: • 1. Start by cutting your cauli head into steak slices. • 2. Add them to a baking dish and drizzle in oil and half the Cajun spice blend, brush or rub it into all the nooks and crannies then repeat on the other side. Sprinkle with some salt and a little more olive oil once all rubbed in. • 3. Add to the oven to roast for 25 mins at 190C. • 4. Now chop up all the chimichurri ingredients finely and add to the bowl with the olive oil, apple cider vinegar
