Frangipane mince pies
Frangipane mince pies are so much easier to assemble than traditional ones as the frangipane topping is easier than a fiddly pastry top. They also taste wonderful, especially with a dollop of rum butter.

Cheese Shortbread
Shortbread doesn’t have to come in a tartan tin! You might think that making 40 of these is a bit over the top on our part, but be warned – no one can eat just one. And once you start, you can’t stop. The dough freezes well, though, so if you like, pop one of the logs in the freezer for another time. You can slice and bake the dough from frozen or defrost it first, as you prefer. Use hard cheeses, such as Parmesan, mature Cheddar or Gruyère, work best, just grate the cheese as finely as possible

Taken from our latest book, Brilliant Bakes, this one requires a little self-discipline. While many cakes are best eaten on the day they are baked, gingerbread improves with time. Wrap these up, stash them away in a tin and enjoy a lovely sticky treat a few days later. It’s worth the wait, we promise.
