Lentil & sweet potato curry. Pinned and tried!! Certainly nowhere as near as spicy or hot as I normally make my curries, this was none the less a delicious and warming dish. Making it spicier, I think, might ruin some of the more subtle flavours.
Spinach is high in iron and contains many vitamins and minerals that are essential for a healthy body. The feta is salty and crumbly and having chunks dispersed throughout the muffin is just pure taste-bud heaven.
4 large potatoes-scrub and cut 2 tbsp olive oil tsp salt ground Optional: 1 tsp spice of choice Spread single layer- on baking sheet and toss with the olive oil and regular salt. Roast for minutes, turning now and then with a spatula.
