As the leaves slowly begin to turn and the cooler nights draw in there is nothing quite like the thought of curling up with a comforting bowl of warm spiced pumpkin squash soup for the perfect cosy night in.
We were busy hunting for an alternative to the overly sugar laden offerings when we came across this recipe from Deliciously Ella that we just couldn’t skip past. It’s easy to make, tastes incredible and is perfect if you are looking for something new at lunch time. Plus, you probably have everything you need already in the cupboards!
Originating in Vietnam a Pho dish (pronounced “fuh”) is a delicious, warming soup and although many choose to eat it in the colder months we think it’s fresh flavours and bright colours make it a great dish to tuck into all year round. if you’re anything like us you probably want to get home, cook and enjoy your meals as quickly as possible after a long day at work so this is our speedy take on traditional Beef Pho that means you can be tucking in to your Pho in no time!

Many popular hummus recipes require the use of a food processor or blender, but as this ancient recipe far predates the invention of electrical kitchen appliances we think it is much more authentic to make it in a pestle and mortar. Not only is it more traditional, but we think it actually gives you better control over the consistency of your hummus as it’s easier to monitor and feel how smooth your dip is becoming before it becomes too wet.
Healthier than fried varieties our crisps are simply baked in the oven that not only makes them better for you, they’re also much easier and safer to make. All you need to make these tasty crisps is a mandoline, a non-stick baking tray and a large mixing bowl. We chose to peel our vegetables, but you can leave the skins on if you wish just make sure to keep a close eye on your crisps to check for burning.
