Ratatouille from FoodNetwork.com-Excellent recipe. Easily adjusted to accommodate whatever vegetables you have on hand. Also, we like using a 9x13 under the broiler rather than stove-top after sauteing the onions. Simply add the new veggies and stir at each step. Takes a little longer, but the crispy char from the broiler is worth it. Top with some crumbled feta for a perfect side or entree.
Drunken Chicken Marsala with Tomatoes - A Favorite! I made this on 3/19/17 and it was yummy. I added some chicken broth and a bit more marsala to make extra sauce but other than that I followed the recipe. I also made my own all purpose seasoning so that I could control the amount of sodium added to the dish. I'll definitely make it again.
