We Southerners LOVE our Summer Veggies. But, they can be too much to handle when you have GP. Well, I have made them more tolerable by changing the traditional way they are prepared. Add your desired type of pea or vegetable to water and bring to boil. Add 2 tablespoons Extra Virgin Olive Oil, 1/2 c Gluten & Soy Free chicken broth, and salt to taste. Cook until soft. Boiled veggies are a great place to hide healthy oils like olive oil, or coconut oil, to aid in digestion. *Puree if needed.
