Egg White Omelet Muffins: Mix together 6 egg whites or 6 whole eggs and what ever veggies and seasonings you like in an omelet (spinach, green peppers, onion, chives, turkey bacon, cheese). Pour in muffin tins and cook at 350 degrees for 20-25 minutes. Makes approx 24. Great to cook in advance and re-heat for a quick on the go breakfast!
