2 zucchinis, 1 Tbs olive oil, 1/2 C bread crumbs, 1/2 C parm cheese, 1/2 Tsp salt & pepper // Preheat oven 450°, Slice zucchini 1/4 inch thick, toss in oil, combine dry ingredients in a bowl, dip zucchini in mixture & place on greased cookie sheet, bake for 18-22 min - Enjoy!
