Otak-Otak. 'Found cooking over beds of hot coals in Singapore, Malaysia and Indonesia, otak-otak is a spicy paste made from fresh fish, onions, eggs and a vast array of herbs and spices then grilled inside broad green leaves (usually from banana or pandan trees). The heating process turns the paste into a gelatinous pâté, which can be mixed with other dishes or eaten straight from the leaf.' http://www.lonelyplanet.com/indonesia
