"Modernist Bloody Mary" A molecular gastronomy shot of bloody mary made with made with heirloom tomatoes, garlic, black pepper, horseradish, mustard, salt, Ketel One vodka, calcium lactate powder, and a small piece of grilled shrimp. The mix is spherified in a thin shell of gelatin and topped with a green stem made from a mix of juiced celery, salt, and gelatin in a custom-made silicone mold.
