Garlic Crusted Cod - made for dinner 5/23/13 - Delicious! I didn't have lemon which I think would have made this perfection but we couldn't stop eating it! I'm not big on seafood but I plan on making this with the rest of our frozen cod. (Fwiw, the cod we have tasted fresh even though it had been frozen.)
Lay baked potato (or sweet potato) on its side, and use a knife to carefully cut off the top third of the potato. Hollow out the middle of the potato to make a “bowl”. Place 1/2 tablespoon of butter in the middle of each bowl. Then gently break an egg into each bowl, careful not to break the yolk. Top with bacon, cheese, parsley, and then season with salt and pepper. Bake at 350 degrees F for 20-25 minutes.
Crab Cakes with Horseradish Cream | Lump crabmeat is mixed with only enough bread crumbs and mayonnaise to hold it together, then coated with more crumbs and fried to a golden brown. A mixture of sour cream and horseradish provides lively accompaniment.
