Coconut rice pudding. Adapted from Instant Pot recipe: 3/4 C arborio rice 1.5 C water 1/4 C light brown sugar 1/2 to 2/3 can of Trader Joe's Coconut cream (amazing!!!) Our rice, water, sugar and a few dollops of cream into pot. Set on manual, high pressure, 7 min. Natural release, then stir in remaining coconut cream (to taste). Top with shredded coconut and cinnamon. So easy! I'd increase the water or add some coconut milk too to make it softer.
