Nicaraguan Guacamole: 4 large eggs, hardboiled and diced; 3 ripe avocados, pitted and diced; juice of 2 limes, or to taste; salt to taste; 1/2 small white or yellow onion, finely diced; large handful of chopped fresh cilantro (optional). Directions: In a medium mixing bowl, combine diced avocado, lime juice, and salt, and toss to combine. Add diced egg, onion, and cilantro (if using). Mix to combine, then taste and add lime juice or salt as needed. Serve immediately.
