Grilled Chicken with Roasted Sweet Potatoes and Veggies. 21 Day Fix: 1 red, 1 yellow, 2 green

3 Chicken breasts, sliced bell peppers, sliced mushrooms, 3 slices pepper jack, 1 egg and whole wheat bread crumbs. Flatten chicken, place cheese, a few bell pepper slices and mushrooms on chicken. Roll up, dip in egg and then in bread crumbs, bake 400 degree for 30 minutes. AMAZING!  Just made it tonight, it's always fun to come up with new chicken LOW CARB recipes!!
