Strawberry Cheesecake Jars (S) Make batch of Slim Belly Jelly (page 411). Roast sliced almonds (or other nuts as desired). Set both aside to cool. Whip 1 cup heavy cream until soft peaks form, then add 8 oz cream or neufchatel cheese, 1-2 doonks stevia, and 1/2 tsp vanilla and blend. Spoon this mixture into the bottom of 12 mini jars (these are 4 oz), then add nuts and slim belly jelly. Close off the containers and refrigerate. Can also use larger jars and layer berries on the bottom.
