After pining away for the perfect homemade veggie burger, Alexandra met her match in this falafel-inspired bean burger. Quinoa and chickpeas serve as the hearty base, tons of spice and fresh produce are tossed into the mix, and everything gets tied together with a delicious tahini sauce.
Quinoa, Black Bean & Veg Burger. Olive oil; 1 red onion & 2 cloves garlic, chopped; 1/2 tsp salt; 1x425g can black beans, drained, rinsed; 2 T tomato paste; 1 large egg; 1.5 C cooked quinoa; 2/3 C corn; 1/2 C cilantro; 1 T chilli sauce; dash smoked paprika; 2 tsp ground cumin; 1/2 C rolled oats; 1/4 C oat flour. Heat oil in pan, saute onion, garlic. Place in bowl, add beans & mash. Add other ingredients. Mix well. Form into 6 patties. Refrigerate overnite. Cook on bbq.
