Roadside Chicken Marinade, 1 1/2 tbsp ancho chile powder 1 tsp dried oregano (preferably Mexican) Pinch of cloves 1/4 tsp cinnamon (preferably Mexican) 2 garlic cloves, minced or crushed through a garlic press 3 tbsp apple cider vinegar 1/4 cup orange juice. carrot muffins: these are delish! i didn't have ww flour, so i used white. i didn't have enough honey, so i used sugar (cut down to 1/2 cup). i used coconut oil & it was hard to 'cream', but seems to have worked fine anyway... i also added orange zest. recipe yielded 12 regular-size muffins & 18 mini muffins :)
1 lb chicken breast. boneless and skinless 4 ounces monterey jack pepper cheese. shredded (you can use up to 6 oz) 1 cup frozen spinach. thawed and drained (you can also use fresh cooked spinach) 2 tablespoons vegetable oil 2 tablespoons cajun seasoning 1 tablespoon breadcrumbs sea salt. to taste fresh ground black pepper. to taste
