Roadside Chicken Marinade,      1 1/2 tbsp ancho chile powder 1 tsp dried oregano (preferably Mexican) Pinch of cloves     1/4 tsp cinnamon (preferably Mexican)     2 garlic cloves, minced or crushed through a garlic press  3 tbsp apple cider vinegar     1/4 cup orange juice. Allow to marinate several hours or overnight (or, in my case, freeze chicken and cook when you want to).  From the book Mexican Everyday by Rick Bayless.

carrot muffins:  these are delish!   i didn't have ww flour, so i used white.  i didn't have enough honey, so i used sugar (cut down to 1/2 cup).  i used coconut oil & it was hard to 'cream', but seems to have worked fine anyway...  i also added orange zest.  recipe yielded 12 regular-size muffins & 18 mini muffins :)

1 lb chicken breast. boneless and skinless 4 ounces monterey jack pepper cheese. shredded (you can use up to 6 oz) 1 cup frozen spinach. thawed and drained (you can also use fresh cooked spinach) 2 tablespoons vegetable oil 2 tablespoons cajun seasoning 1 tablespoon breadcrumbs sea salt. to taste fresh ground black pepper. to taste
