Roasted Salt ‘n’ Vinegar Baby Potatoes.... very good! I didn't leave them marinating in the vinegar as long as recipe recommended, had some vinegar flavor but next time will leave in the full 20 min or so for extra tang.

These are absolutely amazing! Be prepared to have a lot of potato scraps left over from cutting them into rectangles but it's worth it! Make country fried potatoes for breakfast tomorrow with the pieces-parts you don't use.
