1 15oz. can salmon (I prefer the pink salmon) 2 eggs, beaten 1 c cracker crumbs 2 T cornmeal 1/2 t seasoned salt dash of pepper oil Open salmon, drain liquid. Pour salmon in bowl & pick thru & remove skin & bones. Mix cracker crumbs, eggs, corn meal, & seasonings into salmon. Shape into uniform size patties about 1/2" thick. The mixture should stick together well. Pour enough oil in a pan to cover the bottom and heat to medium. Place in pan & fry on each side til golden brown.
