Kale Stuffed Portobellos are SO easy! Just brush your mushrooms with oil and roast them for up to 10 minutes in a 375 degree oven, until they look juicy. Reserve a tablespoon of the juice and combine with 1 1/2 tsp Roots Black Bean Hummus and the juice from half a lime. Combine until drizzlable. Meanwhile, steam chopped kale in a small amount of water until it's tender and a nice shade of green (don't overcook). Stuff the peppers with kale and drizzle with the Black Bean sauce. #yum #vegan
