Breakfast Omelet muffins. These are delicious! They keep really well in the fridge. Great for an on the go breakfast. I used 3/4 of a pound of turkey sausage instead of 1 pound of pork sausage for a lightened up version - only 90cal per muffin and 8g of protein in each one. Very filling and delish!
