Skinny pancakes | no flour. 2 egg whites. 1/2 cup uncooked oatmeal. 1/2 banana. 1/2 tsp vanilla extract (optional). Put all ingredients in a blender. Blend on high for 15-20 seconds. Spray a griddle or skillet with non-stick spray.
Oatmeal Chocolate Chip Pancakes- these are really good! You only need 2-3 to fill you up. I didn't want to bother with the food processor just for less than a cup, it makes it more of a oatmeal flap jack. It makes 8, 1/4th cup pancakes. They are thick, add a little more buttermilk for thinner ones. It makes the house smell amazing!

The only thing I did differently was that I used 1 1/2 tsps of coconut flavoring and 3/4 c of regular milk. I also topped it off with homemade blueberry syrup and coconut flakes. Seriously, I almost cried! :D
