Bukharian Jewish Chicken Rice Pilaf (Osh Plov -- national dish of Uzbekistan) -- Cook 3 chopped onions, 6 carrots thickly grated, 1 T sugar in 5 T oil. Put 2 lbs boneless chicken breasts cut in small pieces on top. Salt, pepper. Cook thoroughly. Put 2-1/2 c rice on top. Do not stir. Sprinkle w/ 1/2 tsp salt. Add 3-1/2 c boiling water. Lower heat, cover. After 15 min scrape down sides, poke holes thru rice to pan bottom (use spoon handle), cover, cook 15-25 min til rice tender.
