We are excited to share this delicious french lentil salad recipe with you all. Between spending 5 years as a vegetarian in my “youth”, and creating Vegetarian meals for Inn guests, I became rather picky as to “Veg” options. What a long way Vegetarian cuisine has come in the last 40 years!
This white bean salad is a great lunch or dinner. Warm, crisp but tender bunch carrots sautéed with leeks, and white beans in a vinaigrette scented with shredded fresh basil spells comfort food to me. Additional crunch from optional toasted sliced almonds tops off an (actually yes,) easy lunch or light supper.
Thick, creamy, saucy red curry lentils ----I made this with red lentils - seasoned it with salt at the end, and stirred in an extra cup coconut milk just prior to serving - Thought it was YUMMY as - and now our hair, clothes and house smell like curry ;-)
We love chopped veggie salads in our house. Truthfully, I think people are turned away from salads because they don’t feel compelled to get creative with them. Fresh flavorful herbs are a MUST and making your own tasty dressing is also a great perk. Make a big bowl of this for dinner and add your favorite protein.

Layered Raw Taco Salad. Reminds me of something from Cafe Gratitude in Berkeley! I made both the walnut "meat" and the cashew "cream" and they were both really good, especially the cashew cream!! Will totally make this again!
