I was taught to cook this soup by my first husband, who is from Mexico. He made this dish for the first time for me when we where pregnant with our first son.Needless to say, me being a hungrey pregnant woman, I ate 3 bowls, not small bowls, but LARGE bowls,it's that good! Caldo de Res is as simple as its name implies; in case you are not familiar with the dish, the name literally means beef soup, which is just what this hearty and satisfying soup is. Beef, bones and vegetables are simmered together to create an incredibly delicious soup which is as comforting as comfort food gets.
POSOLE - 1 - 2lb pkg BUENO frozen posole, chop 1 onion, 2 lbs lean boneless pork cubed, 2 cloves garlic minced -1 tsp. dried oregano - salt /pepper, 4 qts water. Rinse posole to wash off lime. Place ingredients in pot bring to boil cook med until posole blossoms/pork falls apart. Chile Sauce - Heat 2T. veg oil, add 2T. flour cook until golden add 1/4C. red pure chile powder cook 1 min gradually add 2c cold water stir constantly, add 3/4t. salt ,1/2t. garlic salt simmer.
Menudo is made from tripe, hominy, pigs feet, onions, cilantro, oregano, green and red pepper, garlic, salt, and more!..this can also be topped with fresh raw white onions and a squeeze of lemon or limes.
