Quinoa   Sautee 1 tbsp olive oil 3 crushed garlic cloves 1/2 med. diced onion 1 cup chopped cooked chicken breast 1/2 red bell pepper 2 and 1/2- 3cups low sodium chicken broth 1 cup quinoa, cover, slow heat ( cook until tender about 20 min.)  Add more water or broth if needed. Stir frequently until dry. Top with cilantro, bean sprout and green onion
