Hot Coffee Grog - 2 ounces Demerara rum • 4 whole cloves (or 1/4 tsp. ground cloves) • 4 to 6 ounces fresh-brewed coffee, to taste • 1/4 ounce allspice liqueur (or 1/4 tsp. ground allspice) • 2 teaspoon honey or brown sugar • 1 cinnamon stick • 1/2 ounce Jamaican rum • long strip of orange zest, for garnish - In a tall, heatproof glass or mug, dissolve the sugar or honey in a little hot coffee, then add the remaining ingredients. Stir with the cinnamon stick; garnish.
You want to something special for a party, but the recipe calls for cake flour and buttermilk and all you have is all-purpose and 2%. It's happened to the best of us. Luckily, there are substitutions for these no-so-common ingredients that you can whip up with items you likely already have in the cabinet (baking soda! cornstarch! lemon juice!)
1 cup dry powdered milk 1 cup non-dairy powdered coffee creamer 1 cup French Vanilla flavored non-dairy powdered coffee creamer 2 1/2 cups sugar 1 1/2 cups unsweetened instant tea 2 tsps. cinnamon 2 tsp. ginger 1 tsp. cloves 1 tsp. nutmeg Combine all ingredients in a large bowl with a wire whisk. Add small amounts to a blender, blend until it becomes a fine powder. Store in an airtight container. To serve – add 3 tsps. to a mug of hot water, add a dash of milk.
