My all-purpose dry rub is ~ 8 parts quality paprika, 8 parts brown sugar, and then 1-2 parts each of garlic powder, dry mustard, onion powder, salt, black pepper, chipotle pepper, chili seasoning, and a bit of cayenne pepper. My electric smoker sits around 250-300 degrees and these take 1-2 hours.
Smoked Spice Crusted Chicken Fingers - low carb - I’m looking for something different with chicken, so I decided to just cut the boneless skinless chicken breasts into strips, then heavily coat them in a spice rub. No marinating for a change. Just a nice heavily crusted spice rub with the addition of a strong mesquite smoke flavor. I have to say, I got exactly what I had in mind with these smoky, spicy chicken fingers. Dee-licious!
