Start with fresh, frozen, or shelf-stable packaged gnocchi to make this cheesy recipe doable for a weeknight dinner. Think of this bubbly baked casserole like an upgrade on mac and cheese.

Use at least half beef broth (i use boullion) in place of water; after removing from heat add 1/2-3/4 c ketchup, a few dashes of balsamic vinegar, 1/3 c bread crumbs, 2-3 oz velveeta. Perfect to stash in freezer, so yummy with tomato and can top with american cheese for kids especially.
