Simple bouillabaisse

A classic French fish soup, perfect for dinner parties. Marcus Wareing’s version is flavoured with smoked paprika, saffron and pastis, an aniseed-flavoured spirit.

• 300 ml Fish stock
• 1 Hake, small fillet of
• 1 large handful Mussels
• 1 Salmon, small fillet of

• 1/2 Brown onion
• 1 Celery
• 1/2 Fennel, bulb
• 2 Garlic cloves
• 1 bunch Parsley, fresh
• 2 Plum tomatoes, fresh

• 1 tbsp Tomato puree
Condiments
• 1 Lemon, juice only
Baking & Spices
• 1 pinch Paprika, smoked
• 1 pinch Saffron
• 1 Salt and freshly ground black pepper
• 2 Star anise

• 1 Olive oil, extra virgin
Bread & Baked Goods
• 1 Bread
Beer, Wine & Liquor
• 175 ml White wine
Other
• 2–3 tbsp pastis (anise and fennel liqueur)
