APPLE BROWNIES. Awesome! I added an extra apple, and cooked it in a 8x8 pan. Thick, chewy, and moist.

Quiche Cups - Crack a dozen eggs in a large bowl and whatever else you want (veggies, meat, cheese...), along with a couple tablespoons milk, and any seasoning you want.  Wisk and distribute into 1/2 to 2/3 full muffin wells. Bake at 350 for about 30 min. and enjoy all week.
