Raw carrot cake cupcakes with coconut cashew icing. Recipe: 2 cups shredded carrots 1 lb of pitted dates 1/2 cup walnuts 1 tsp cinnamon 1 tsp nutmeg 1/2 tsp ginger Dash of vanilla Icing: 3/4 cup raw cashews (soaked) 3 tbsp raw honey 2 tbsp melted coconut oil 1 tsp vanilla 1 tsp fresh lemon juice 1/4 crystal salt Blend cupcake base in a Vitamix, scoop into cupcake liners and "set" the cupcake in the fridge. Blend icing ingredients in a Vitamix, and spread on cupcakes. Store in the fridge.
