Quick Christmas Tortoni With Amaretti Cookies and Pistachios - Line a muffin tin with foil or holiday muffin cups. Let the ice cream soften a bit in a large bowl. Using a rubber scraper, quickly add the crushed cookies, pistachios and red cherries. Spoon mixture into muffin cups and top each one with a whole cherry. Cover with non-stick aluminum foil and freeze for at least four hours.
1 cup coconut butter few drops peppermint oil 2/3 c – 1 c dark chocolate Makes about 16 peppermint patties. Combine the first 3 ingredients thoroughly. Then shape into 1.5” patties & place on parchment-covered baking sheet. Refrigerate or freeze. Meanwhile, melt chocolate. Dip the mint patties into the chocolate, covering thoroughly. Place back onto baking sheet. Refrigerate until set.
