A balut (balot) is a developing duck (itik) embryo that is boiled and eaten in the shell. Pateros is where you can find this exotic delicacy of the Philippines. It is one of the many street food and it is usually sold at night time. The age of the egg before it can be cooked is a matter of local preference. In the Philippines, the ideal balut is 17 days old.
