Suya is a ubiquitous Nigerian street food that somewhat resembles Indonesian satay. Suya is thinly-sliced meat, marinated in a spicy peanut sauce and grilled on wooden skewers, kabob-style. It’s often served with thinly sliced onions, cabbage, tomato or cilantro leaves. I like to serve it with all of the above tossed with a simple lime dressing. It makes a great appetizer or a satisfying light main course.
