Sweet Potato Hash - This is 1/2 of a sweet potato, some onion, garlic, sweet mini-peppers, & fresh parsley. I used a tsp olive oil to fry it up & seasoned it with Mrs Dash Extra-Spicy, but you can use any seasonings you like. It looks lovely & was amazing along side my scrambled eggs! 21 Day Fix totals: 1 red, 1 yellow, 1/2 green, 1 tsp.
