Mock lasagna is a crowd pleaser and comfort food. It's delicious like lasagna, but is much simpler to make and is easy to make in large quantities. The secret is making the tomato sauce from scratch (don't worry- it's easy), but you can use store-bought sauce if you like.

Crock Pot Breakfast Casserole- I was short on eggs, and every other crockpot recipe called for 12 eggs, while this one called for 6, so this one it was! Cooked for 7-8 hrs on low, which was just right. This was definitely bland, but texture of potatoes was good, and a sprinkle of Lawry's seasoned salt helped tremendously! Used leftover Christmas ham in lieu of bacon/sausage. - Jen Kramer
