Pork meatballs with pasta in tomato wine sauce. Pretty easy and good for a weeknight. I added more spices to the meat plus some salt. Cheated by using a jar of tomato-basil marinara and adding Italian seasoning and garlic powder to sauce. Used angel hair pasta.
One 4-lb boneless pork loin 1 teaspoon salt 1/2 tsp black pepper 2 tsp herbes de Provence 2 tbsp butter and 1 tbsp vegetable oil Preheat the oven to 375 Rub salt, pepper and herbes de Provence all over so the seasonings stick to the pork. Heat a small roasting pan over medium high heat with butter and oil and when it is sizzling add the roast. Brown, about 8 minutes total.Place in the oven and roast for about one hour, until 150 degrees. Let it rest for 10 minutes
