Mexican Chicken Casserole - I love the flavors of this mexican casserole, and I really love how simply it comes together. Cheese, chicken, chilies, yum! Hint: I made two small changes. First, instead of mushrooms, I used a can of rinsed/drained black beans. And instead of whole green chiles, I used an equal amount of chopped ones. I stirred the beans and chilies together and then followed the recipe from there. Worked great!
