Vegetable Moussaka - I made this for clients last week and it was killer!! Hihgly recommend the recipe, just sub out the whole milk for 3/4 cup less of skim, I used Pecorino-Romano instead of Parmeggiano-Reggiano and it worked really well

Vegetarian Moussaka -I omitted the bechamel and just topped it with parmesan..recipe is labor-intensive but well worth it!
