Gently heat, stirring until the sugar has dissolved. Add the mint sprigs, simmer for 10 mins until syrupy. Strain through a sieve into a blender. Add the watermelon in chunks and whiz until smooth. Spoon into a bowl and freeze for 2 hrs. Break it up and repeat the process until the puree is frozen into large ice crystals…
