Mini Pineapple Upside-Down Cheesecakes Ingredients: 1 cup graham cracker crumbs 1/4 cup melted butter 2 tbsp sugar 8 oz cream cheese, softened 1/4 cup sour cream 1/2 cup granulated sugar 1 tsp vanilla extract 1 large egg 1 can (8 oz) pineapple slices, drained 2 tbsp brown sugar (for caramelizing pineapple) 1 tbsp butter (for caramelizing pineapple) Instructions: Preheat your oven to 325°F (165°C). Grease or line a muffin tin with paper liners. In a bowl, mix the graham cracker crumbs, melted butter, and 2 tbsp sugar until well combined. Press the mixture into the bottom of each muffin cup to form a crust. In a separate bowl, beat the cream cheese, sour cream, granulated sugar, and vanilla extract until smooth.
