1 Sweet Potato- skinned & diced chunks 1 Yam- skinned & diced chunks 2 Apples, peeled & cut in quarters EVOO, salt, pepper, & cinnamon Preheat 375. Place prepared fruit & veggies on a parchment lined baking sheet. Drizzle w/ EVOO. Sprinkle sweet potato & yam with salt & pepper. Dust apples w/ cinnamon. Place in the oven & roast for 45-50 min, until fruit & veggies are fork tender/not charred. Cool. Dice fruit & veggies into pieces & store in airtight container in fridge until ready to serve.
There are SOO many great recipes for K that I've made in this book! Now I use ideas from here and cook a meal, minus the salt, for Brandon and I then throw it in the food processor. Recommend this to all mommies :-)
