Salmon & Cucumber Bites - Peel 2 English cucumbers and slice them into 1" rounds. Arrange on a platter and refrigerate while preparing the cream cheese. Place 8oz soft cream cheese, 3tbsp fresh chopped dill, 1tbsp horseradish, and 1tbsp heavy cream in a large bowl. Beat until well combined. Spread 1tsp of cream cheese on top each cucumber slice, top each slice with a bite sized piece of smoked salmon (1 lb total, cut into pieces). Insert a toothpick down the center and serve.
