When held up against the fresh, mouth-watering produce at farmers markets, canned foods can definitely pale in comparison (to say the least). But they have their time and place too! This soup recipe makes use of a few of our canned pantry staples: black beans, diced tomatoes, and chicken broth. A single piece of bacon adds a subtle smoky flavor and silky texture. And sure, feel free to throw in a few seasonal ingredients to round things out!
Chicken, Bean, and Tomato soup: I used regular bacon instead of pancetta (because i'm poor..) and it was still delicious! We also tried this recipe with cream cheese, whipping cream, and cheese for a 'cream soup' variation and it was better (in my opinion).
Vegetable lasagna - When one has fresh tomato sauce, homemade ricotta, and a huge haul of vegetables in one's fridge, a hearty lasagna is really the only possible course of action. If it doesn't yet feel quite autumnal enough to justify a plate of cheesy lasagna, that's fine — sneak a slice now and freeze the rest for meals to come.
