Kiwi curd 3-4 kiwis 1 lemon 250g granulated sugar 80g butter 4 eggs Peel and finely mix the kiwis. In a saucepan , pour the lemon juice , kiwifruit puree , sugar and butter. Heat gently until the butter is melted. Add the beaten eggs. Whisk the mixture briskly off the heat. Return to low heat and allow to thicken the mixture. Pour the curd into two jam jar scalded and cool completely. Close the jars and refrigerate .
