Cheesy Leftover Mashed Potato Pancakes ~ Mix 3 c mashed potatoes, 2/3 c grated cheese, 2 T sliced green onions, 1 beaten egg & 3 Tbsp flour (add another egg or more flour if too soft). Using your hands, divide the mixture into 12 portions; roll each into compact ball then flatten to about a 1/2-inch-thick. Carefully dredge each pancake in remaining 1/2 cup of flour. Fry in batches til brown.
Low carb chocolate mug cake - Serves: 1 - 2 tablespoon almond meal, 2 tablespoon Splenda sugar substitute, 1 tablespoon unsweetened cocoa powder (Hershey's cocoa powder), 1 tablespoon coconut oil, 3 tablespoons lite or heavy cream, 1 teaspoon vanilla extract, 1 whole egg, DIRECTIONS: Mix everything together in a big mug or small bowl. Put it in the microwave for 90 seconds and serve.
Found this at Taste of Home and all I can say is that it was a huge hit with my guys at the dinner table. I made it a couple of weeks ago and they are already requesting it again. The prep time seems like a lot but that is basically baking the potatoes and frying the bacon. This step can be done the day before.
