Pecan Apple Quinoa Muffins- have these baking now! :) I did approx 2/3 C Almond meal, less than 1/3 flax meal and some Chia seeds for my flour mix.  Then I was generous with the apples, pecans and cinnamon, and since I used raw pecans, and added cinnamon, put in a mini scoop of stevia for a little sweet balance ;) They are smelling yummy!!
