parmesan crusted shrimp quesadillas with monterey jack cheese and sun dried tomatoes. I forgot to add the sun-dried tomatoes, but it was still pretty awesome. I cut down on the cheese and number of shrimp too. as calc'd on my tracker.
Can you tell i really like shrimp & asparagus? Adding pasta just makes it heavenly. Skillet Shrimp with Orzo, Asparagus, and Feta. My kids might like this if I use peas & parm instead of asparagus & feta.
