Smashed Roasted Potatoes! I've been cooking these for some time now, they are AWESOME! I boil the potatoes, using red and yellow. I then drain and smash with a potato smasher. I drizzle olive oil on parchment paper on cookie sheet. Place potatoes on there and then melt butter and add garlic powder and parsley. drizzle on top of each potato. Bake till crisp!
